Renowned for its exquisite French cuisine – perfectly crafted in both flavour and presentation – multi-award winning Le Beaulieu has for over a century been the venue of dazzling soirées and sublime Sunday brunches. Wine connoisseurs will find pleasure in our impressive wine list featuring selections by our passionate sommeliers.
Opened in 1901, Le Beaulieu was the first-ever French restaurant in Hanoi. The marble floor, pillars, and other contemporary design elements are all inspired by the sophisticated but welcoming traditional restaurants in Paris. The decor is a unique blend of Indochinese ambiance and French sophistication: marble and wooden parquet floors, large windows overlooking the street, soft breeze wafting from the ceiling fans, lit by chandeliers at night.
The French national has worked in some of the world’s top kitchens and hotels and brings more than two decades of culinary experience to Vietnam’s most storied hotel.
In 1996, Raphael started his career at the three Michelin-starred Paul Bocuse restaurant in Lyon, before continuing his apprenticeship in a number of award-winning restaurants around France, including Jour de Marche in Lyon and The Yoann Conte Restaurant by Marc Veryat in Annecy.
Prior to joining Metropole Hanoi, Raphael worked as Chef de Cuisine at the Ritz Carlton Café in Macau where he specialized in classic French fare with a modern twist and fresh seafood.
